Kahlua Cream Cheese Puffs

Insomnia... Haven't been sleeping well lately...
Plus the avalanche of work recently, I'm totally drained out by the time I reach home after work..
Wanted to bake some coffee cupcakes (a form of stress relieving for me.. trust me, it works, baking can take off any "load" off your mind at that moment), but really am dead tired to do so..
was lying on the bed resting when suddenly "bubbles" start popping in my head...
Hmm... What if I substitute the liquid ingredient in the choux puff with Kahlua? Would that work?? And use mascarpone cheese + Kahlua as the filling??
I have to try it, else, it'll be another CONFIRMED insomnia nite for me coz this "thing" will keep hogging me thru out until I really set my hands on it.
Ransack the fridge.. Darn.. run out of mascarpone cheese.. But I still have some cream cheese left.. it should work I guess...
Well...this was how my "experiment" turned out:
1. The Puffs with Kahlua of coz!!
The puffs were a little on the brown side. I followed the temperature in the recipe, but guess it was on the higher side, hence, my puffs turned out to be slightly over browned.
Nevertheless, the taste was good. Daddy liked the taste, he said it has this lingering "fragrance" in the puff..
Luckily they didn't taste bitter due to the browning caused by the high temperature.. phew....
2. The filling - Cream Cheese + Kahlua
Well, no mascarpone cheese, I'll juz have to make do with the cream cheese I have..
Think it would have tasted better with mascarpone instead of cream cheese.

Overall - I'll try the Kahlua puffs again, this time round, set the oven at a lower temperature..
The filling... I'd use mascarpone instead. Cream cheese wasn't what I wanted for taste.. Not as fine as mascarpone..

Moo.. Moo. *Hi....yak!!*

Last nite while surfing thru the tv channels (its an old bad habit of mine, never let me get hold of the remote, I juz love surfing thru all channels..haha...), caught the last 20mins of a damn silly, hilarious comedy "Kung Pow! Enter the Fist".

The leading man of the show, Steve Oedekerk (who happen to be the director and writer of the show) got his head super-imposed onto a chinese kungfu star in a 70s kungfu movie. He changed the lines, the plot, made them super hilarious, with a dash of his own humour..

Liked the part where he battle it off with the cow.. In MATRIX style.. The flying kicks and the squash of milk towards Steve Oedekerk in slow motion...whahahaha...
In the end, he won the cow by "over milking" it.. hhahahahaha....

The part where he dubbed the leading actress (duno who... she's beyond my time to let me know who she is.. haha..) and made her go "wee... wee..wee.." in the movie was simply irritatingly stupid BUT FUNNY.. hahaha...

Laff my head off even thou it was only the last 20mins of the show...

Baby said he had the dvd of the show, must go get it from him and watch it from the beginning...

Oh ya! Saw on net that a sequel of this movie will be release in 2008, I'm going to catch it!!

Kahlua & Cream

Overworked in office this week.. Totally drained..
Decided not to go out today... Nap all my way thru.. haha..
Saw recipe for Kahlua & Cream Cupcakes from "How to eat a cupcake", decided to give it a try..
Lazy to get the electric whisk out of the box, shall use the hand whisk instead..

Oh mann, was it tiring... First, using the balloon whisk to beat the butter and sugar.. Next, using the whisk to beat the egg white to meringue stage.. ahhh... my right arm is getting bigger than my left... haha...




These are what I baked today.. Liked the Kahlua cream, nice...*burrrppp* oophs.. excuse me..hahaha.. If I'm not so tired, I might try out a recipe on coffee cupcakes and team it up with the Kahlua cream... Wonder how it'll taste like...

First order!!

Couple of weeks back, I was really thrilled when a colleague told me she liked my blueberries chocolate cupcakes with Chocolate ganache and wanted to order some from me for her husband's birthday!!!

Haha!!! This is really one big piece of good news for me in 2007 (thou the year hasn't ended yet.. haha...)!!

Order accepted!!!

She wanted 29 of them.. Oh mann... Even if I'm to sacrifice my sleep, I die will also ensure my order is smoothly "executed"!!

On the night before my "delivery date", my production "plant" was officially opened!!!

My blueberries chocolate cupcakes just out from the oven... In it's "naked" form....

Glad that my colleague's husband liked the cupcakes and some of her husband's peers even asked where were the cupcakes purchased!! Darn... Should had imprinted my contacts all over the box.... Whahaha.. This is really the greatest satisfaction I have!!!

Wonder when will the next order come in.... hahahaha...

Happy Birthday Singapore!!

Its Singapore's birthday today, Happy Birthday!!!

My little princess came over to my place.. She sooooooo cute!!! Gave me a bear hug when she saw me at the gate.. haha...

Played with her for awhile (she's coming to two only...) and started my day of baking...

Couldn't decide what to bake today.. Been baking chocolate cupcakes for the last couple of weeks...
So... Me ended up baking the following:
1. Peanut Butter Cupcakes with Banana Pastry Cream
filling and Chocolate Ganache topping
2. Strawberries Cupcakes with Raspberry Swiss Meringue topping
3. Rum & Rasins Cupcakes
4. Blueberries Crumbles Cupcakes


Mann... was I tired for trying so many flavors......

Dad likes the blueberries Crumble cupcakes followed by the peanut butter cupcakes.. peanut butter cupcakes without the banana pastry cream and chocolate ganache to be exact... Dad's not a adventurist when it comes to food.. He hates banana and chocolate.. haha... doesn't like rasins also.. What he like best?? Plain old butter cakes... *Boooorrrringggggg*... ok, sometimes he likes it with walnuts... haha...

Princess? She juz like any cakes la... give her anything, she'll juz eat.. dun like? juz spit it out... hahaha...

And dun worry, I didn't feed her any of the Rum and Rasins Cupcakes.. haha...

Cousin Liang liked almost all the cakes.. except.. again.. Chocolate..

Hiaz... Nobody seems to like Chocolate much in this house... while I'm a great fan of chocolate... Funny....
I liked the strawberry cupcake with raspberry swiss Meringue topping.. Nice... Rum & rasins, another of my fav also...

Baby doesn't like banana.. Same as Dad.. haha.. He doesn't like strawberries either.. so, left with blueberries crumbles and Rum & Rasins.. ok, let him try tomorrow and see what he says....

Nintendo WII Day

Cousins, Xiao Pang and Liang, staying over till weekend.. Why? They were lured over by the power of.....NINTENDO WII!!!

Its 12.36am now.. They're still stuck to the TV, growling over every move they missed.. haha. Seeing Xiao Pang play was such an entertainment.. This primary 5 kido has a stomach that that is bigger than the gasoline cylinder hiding in the stove.. haha...

When the action come when he is required to sway both his hands as if he's running for his life, you'll get to see his whole stomach wobbling vigorously... not only stomach, every inch of his extra fats would be wobbling in excitement... hhahaha...

They said they like my blueberries crumbles cupcakes.. Starting baking some for them..

Made a batch of 20 minis for them.. guess should be enough for them to last thru the wee hours tonite.. Judging from they way they're hooked to the games, they should be "fighting" all the way to early morning.. Really REALLY early.. hahaha..

These cuppies would come in and be their snacks, in case they get hungry for "exercising" so much while playing the games.. haha...

Once out of the oven, Dad ate 2.. haha.. he liked them straight from the oven... said the crumbles are more "crispy" when they're juz baked....



Hope they won't make too much noise while playing tonite... If they do...... I'll juz cut their throat... haha

"Berry Melting Devils" Episode II















Today... the 2nd sequel of my "Berry Melting Devils" journey... haha...

Ew tried the cupcakes I gave her yesterday.. 6 cupcakes... And what happened???

She ate 3 out of the 6 at 1 blow la!!! She loves them.. hahaha.... And the other 3? I duno, she have 2 or 3 nieces, 1 nephew, 3 or 4 sisters.. wonder how they divide the cupcakes.. haha.. All I knew was her niece, M, took 1 also.. she liked it...

Should had packed more for her..

EW told me she want more.. want me to bake her more on our next meeting.. Hmm... Now you got hooked on, you'll need to PAY for them!!!! Whahahaha... Buy 10 and get 2 free...

She negotiated to buy 1 get 1 free... You go bake yourself la!! hahaha...

Ok la, since you're my best friend.. give you 10 for free this time.. next time you pay!! Whahahha...

So far, she liked this cupcake best and next would be my lemon sour cream cheesecake..

She haven't tried my Tiramisu yet.. wait till you try.. heh heh..
