Plus the avalanche of work recently, I'm totally drained out by the time I reach home after work..
Wanted to bake some coffee cupcakes (a form of stress relieving for me.. trust me, it works, baking can take off any "load" off your mind at that moment), but really am dead tired to do so..
was lying on the bed resting when suddenly "bubbles" start popping in my head...
Hmm... What if I substitute the liquid ingredient in the choux puff with Kahlua? Would that work?? And use mascarpone cheese + Kahlua as the filling??
I have to try it, else, it'll be another CONFIRMED insomnia nite for me coz this "thing" will keep hogging me thru out until I really set my hands on it.
Ransack the fridge.. Darn.. run out of mascarpone cheese.. But I still have some cream cheese left.. it should work I guess...
Well...this was how my "experiment" turned out:
1. The Puffs with Kahlua of coz!!
The puffs were a little on the brown side. I followed the temperature in the recipe, but guess it was on the higher side, hence, my puffs turned out to be slightly over browned.
Nevertheless, the taste was good. Daddy liked the taste, he said it has this lingering "fragrance" in the puff..
Luckily they didn't taste bitter due to the browning caused by the high temperature.. phew....
2. The filling - Cream Cheese + Kahlua
Well, no mascarpone cheese, I'll juz have to make do with the cream cheese I have..
Think it would have tasted better with mascarpone instead of cream cheese.
Overall - I'll try the Kahlua puffs again, this time round, set the oven at a lower temperature..
The filling... I'd use mascarpone instead. Cream cheese wasn't what I wanted for taste.. Not as fine as mascarpone..
